Tofu and Mushroom Pie (for 4)

300gr firm tofu, cubed
2 cloves garlic, crushed
2 tsp finely chopped ginger
2 tbl tomato paste
2 tbl salt reduced soy sauce
1 onion, chopped
300gr mushrooms, sliced
1 cup wholemeal flour
1/2 cup white flour
2 good tbl margarine
2 tbl sesame seeds (optional)

Mix together the tomato paste, soy sauce, ginger and garlic and marinate the tofu for an hour or two.

Saute the onion in a little oil for about 5 minutes. Add the mushrooms for a further few minutes. Combine with the tofu mmixture and set aside.

Rub the margarine into the flour. Add the sesame seeds and just enough water to make manageable pastry. Roll out the pastry and line an oiled pie dish with it. Add the tofu mixture and cover with the remaining pastry. Press the pastry edges together. Bake in a moderate (180degC) oven for 30 minutes or until the top browns.
