Thai potato and tofu cake (for 2)
400 gr potatoes, mashed
250 gr tofu, mashed
juice of 1/2 lemon
3 cloves garlic, crushed
2 tsp ginger root, finely chopped
1 tbl lemongrass stalks, finely chopped
2 tbl chopped coriander leaves
Combine all the ingredients. Form into one large cake in a large, oiled non-stick frypan. Cook on each side until it turns golden brown.
Alternatively, form 4 cakes, place in an oiled baking dish, and bake in a hot oven (200degC) for 20 minutes.
