Sesame Noodles (for 2)

1 onion, chopped
3 cloves garlic, crushed
1 tsp ginger root, finely chopped
2 sticks celery, sliced
1 red capsicum, diced
1 largish carrot, julienned or diced
1/2 cup corn kernels
150 gr tofu cubes OR raw cashews
2 rounded tbl tahini
1 tbl raw sugar
1 tbl lemon juice or vinegar
2 tbl soy sauce
chilli sauce (to taste)
2/3 cup water
150-200 gr noodles or macaroni

Mix together all ingredients from the tahini to the water.

Saute the onion in some oil for 5 minutes. Add the other vegetables and the tofu or cashews. Saute for a few more minutes.

Pour over the tahini sauce. Simmer while noodles are cooking, stirring occasionally.

Cook the noodles in boiling water and when cooked add to the vegetables. Mix well and serve.
