Pasta sauce (for 4)
1 largish onion, finely chopped
3 cloves garlic, crushed
300 gr mushrooms, sliced
2 medium capsicums, sliced
1/2 tsp dried oregano
1 tsp dried basil
8 medium tomatoes, skinned and chopped
2 tbl tomato paste
fresh ground black pepper (to taste)
1 tin (440gr) kidney or borlotti beans OR
1 cup dry beans (soak and cook)
Saute the onion for 5 minutes in olive oil. Add the garlic, mushrooms and capsicums and saute for a further 3-4 minutes.
Add the tomatoes, tomato paste, herbs and pepper. Simmer gently for 15-20 minutes until the tomatoes form a smooth sauce.
In the meantime, bring some water to the boil and add about 300gr of macaroni or spaghetti. Cook for 10 minutes.
Just before removing the sauce from the stove, add the drained beans and heat through.
