Nutty Paella (for 4)

1 large onion, coarsely chopped
3 cloves garlic, crushed
150 gr raw cashews
1 cup brown rice
2 tsp fresh oregano, finely chopped
1 tsp fresh thyme, finely chopped
(only half as much if dried)
400 gr tomatoes, peeled and chopped
1 tin tomato juice (~400ml)
200 ml water
2 carrots, cut into sticks
2 zucchini, cut into sticks
1 largish red capsicum, sliced
juice of 1/2 lemon
1 tbl parsley, chopped (optional)
black pepper

Don't cut the vegetables too small - larger pieces improve the appearance of the dish.

Saute the onion, garlic and cashews. Add the rice and herbs and saute for a few more minutes.

Add the tomatoes and liquids and simmer for 15 minutes.

Add the vegetables and simmer for a further 15 minutes, until the rice is soft. Adjust the water if necessary.

Just before serving add the lemon juice, pepper and parsley.
