Nutloaf (for 4)
250gr ground mixed nuts (not peanuts)
2 medium onions, finely chopped
2 teasp dried mixed herbs
6 slices bread, preferably wholemeal
1 cup hot water
1 tsp vegemite
3 tbl flour
1 medium red capsicum, finely diced
Cut the bread into pieces. Dissolve the vegemite in the hot water and pour over the bread. Allow to stand.
Saute the onions in a little oil for 5 minutes. Add the capsicum and saute for a further 3-4 minutes.
Stir the bread mixture vigorously until it is sticky. Combine all the ingredients and press into an oiled loaf tin. Bake in a moderate oven (180degC) for 40 minutes.
Allow to stand for a few minutes so that it sticks together better. Serve with a tomato sauce.
