Gado Gado (for 4)

1 and 1/2 cups rice
6-8 cups of mixed vegetable pieces, bite size
1 small onion, finely chopped
3 cloves garlic, crushed
4 heaped tbl peanut butter (unsalted)
2 tbl soy sauce, preferably low salt
1 tbl sugar
2 tbl lemon juice or vinegar
1 cup water
1 tsp curry powder
chilli paste, or powder or sauce (to taste)

Cook the rice (about 20 minutes). Steam a variety of vegetables until they are just soft but still firm (eg carrots, pumpkin, sweet potato, beans, zucchini, red capsicum, cauliflower or broccoli to make an attractive colour combination).

To make the peanut sauce, saute the onion in a little oil for about 5 minutes. Stir in the curry powder and garlic, then add the peanut butter. Mix in the soy sauce, sugar and vinegar to make a smooth paste, then gradually add the water and stir until the sauce thickens. Add chilli to taste. Add more water if needed.

Spread the vegetables over a bed of rice, then spoon over the peanut sauce.
