Black-eyed Beans and Banana Rice (for 4)
1 and 1/2 cups brown rice (cook)
2 onions, chopped
3 cloves garlic, crushed
4 tomatoes, peeled and chopped
2 tsp sugar
2 bay leaves
1/2 tsp garam masala
2 tbl tomato paste
1 and 1/2 cups black-eyed beans (soak and cook)
1 tbl margarine
6 tbl sultanas
2 small bananas, finely sliced
2 cinnamon sticks
Cook the rice, and the black-eyed beans (separately).
Saute the onions. Add other ingredients up to the tomato paste and simmer to a sauce. Add the black-eyed beans when cooked.
Melt the margarine and add the cinnamon sticks and sliced bananas. Stir frequently. When the bananas are very soft, mix in the cooked rice and sultanas and heat through.
Serve the bean mixture on the banana rice.
